In Louisiana, a Cochon de Lait is a social event surrounding the roasting of a pig over an open hardwood fire and the feast and frivolity that follows. Let’s kick off NOWFE at Central City BBQ with a Pig Roast Party: whole hog from Boucherie and traditional sides from Central City BBQ, Chairman’s Reserve® Meats Prime Pork Belly and Prime Pork Tenderloin, cooked by local chefs Nathaniel Zimet and Broussard's Executive Chef Jimi Setchem. Tap your toes or try out your “two step” to the music by Louis Michot of the Lost Bayou Ramblers and sip on wine from the Tap Truck Nola and beer from Stella Artois. Traditional Whole Hog BBQ historian, Dr. Howard Conyers, will join us to describe the history behind cochon de lait and Carolina whole hog BBQ, while Chef Nathaniel Zimet breaks down the hog.
